Risotto in a dutch oven

Easy Mushroom Risotto

Ingredients:

  • 8-10 cups (2 L) chicken broth (homemade or store-bought)
  • 4 tablespoons (60 ml) olive oil
  • 2 pounds (900 g) mixed mushrooms, chopped
  • 1 medium yellow onion, chopped
  • 3 cloves of garlic, crushed and finely chopped
  • 1½ cups (300 g) Arborio rice, uncooked
  • ½ cup (125 ml) dry white wine
  • ½ cup fresh sage leaves, loosely packed
  • 1 cup (100 g) grated fresh Parmesan cheese
  • 2 tablespoons butter
  • salt & pepper to taste

Preparation Instructions:

  1. Bring broth to the boil in a saucepan over medium heat, and reduce to a simmer.
  2. Meanwhile, heat a 5.5 Quart Dutch oven over medium heat. When the Dutch oven is warm, add olive oil swirl to coat.
  3. Add chopped mushrooms and stir occasionally until the mushrooms absorb the oil. Continue stirring until the mushrooms release moisture and begin to brown.
  4. Add the chopped onion and keep stirring until onion is translucent. Add garlic and a pinch of salt and stir until garlic becomes fragrant.
  5. Add Arborio rice and stir until thoroughly coated in oil. Sauté rice until the grains become slightly translucent. Pour in wine and stir until mostly evaporated. Lower the heat to medium-low.
  6. Using a ladle, add about a cup of the chicken broth to the rice mixture and stir vigorously to help the rice release its starch. Once the broth is mostly absorbed add another ladle. Continue adding broth one cup at a time like this until the rice is tender and the risotto has thickened but is not watery. It's okay if you have broth left over. If you run out of broth you can continue to add water until the risotto reaches the desired consistency.
  7. Take risotto off the heat and stir through cheese, sage and butter until sage leaves are wilted and risotto becomes creamy. Add more cheese, if you like.

*To make this recipe vegetarian, substitute the chicken broth for vegetable broth.

It is a gorgeous dutch oven and I would've loved to have enjoyed it but the listing is inaccurate - the interior was NOT enameled which is a major part of why I purchased it. Will be returning.

This is the best Dutch Oven. I have had others. They did not compare to this one. It cooks like a dream. Like it should! If I buy any more pans of any kind, it will be a Milo !!!

I got this as a gift for my wife. We’ve used it for everything from stovetop stews to fresh bread. It is a gorgeous green. It has held up to high temperatures in the oven without any problems at all. This is a great Dutch oven, especially if you don’t want to spend as much as premier brands like Le Creuset but you want the same level of quality. This will last a lifetime I have no doubt.

It was a good price for an enameled Dutch oven. If you're considering this, be aware it is NOT non-stick. I'll be baking a lot of sourdough bread in this!

I bought the standard black with gold knob color scheme 5.5Quart. Matches my other cast iron pots and pans perfectly. Finish is very hardy. I have baked in it 3-4 times and no discoloration of the finish or the knob. Easy to clean with warm soapy water as well. Lid also fits my 10" lodge cast iron frying pan perfectly for covering when frying burgers and melting cheese. Doesn't rust when you leave it soaking over night also. Great size for roasts and braises. I also used mine yesterday to deep fry some French Fries. Perfect fit for any crockpot type dishes that you don't have counter space for and can transport easily.
