Très bonne coupe, comme d'habitude chex Dick j'ai vu une photo d'illustration sur le site de la marquqe, le boucherséparer des côtes de porc; je vois aussi ce couteau découper un rôti ou un gigot !

Ich weiss nicht, was Amazon bzw. den Transportdienstleiter hierbei geritten hat. Der Versand erfolgte in einer klassischen Luftpolstertasche, das Messer selbst war ohne zusätzlichen Schutz. Der Dienstleister hat die Luftpolstertasche in den Briefkasten gedrückt, die Klinge ragte dadurch 3 cm aus der Verpackung heraus. Lebensgefährlich!Ich nutze meine Messer für die Verarbeitung von Wildfleisch und muss hier nun leider sagen, obwohl ich mit dem Hersteller sonst sehr zufrieden bin, dass die Klinge bei heutigen Zerwirken direkt den Geist aufgegeben hat. Abziehen von Silberhäuten auf Keulen und Vorderläufen sowie beim Parieren des Rückens konnte kein sauberer leichter Schnitt gesetzt werden.

I work in a meat department and I purchased this and the 10" cimeter from f. dick. I love the 10" blade and use it for almost everything. My only gripe with this 8" knife is the blade geometry is more of a filet knife than a smooth curve you'd expect on a breaking knife like the one that is pictured. The width of the blade tapers significantly as you approach the halfway point.It is however, a good knife with better steel than my former knives(victorinox) and handle material with a very similar texture and a better feel. There is a slight concave-like groove where your thumb would rest if you held the knife standard grip, with the thumb resting on top, making it very comfortable and ergonomic when slicing and carving. These dick models have a handle guard that extends lower than most other knives, which i like. The victorinox knives had a more straightened, rigid-feeling handle with a noticeable bulging seam where the handle pieces were placed together, making it uncomfortable for long hours of cutting.

The edge was sharp out of the box but needed to be polished, after a bit of touching up the knife gave smooth cuts and seems to be holding an edge so far. Handle is comfortable and doesn't slip when wet in my hand. Better than my last set of Forshners ,where the Forshner logo was replaced by the swiss army cross, and there was something different and not for the better with the rebranding of forshner

I purchased this and the 10" Hollow ground to dress out a whole rib loin. I have been using it for everything else now and I love it. It was razor sharp right out of the package, I was going to tune it up a little on the steel but it was shaving right out of the package.

Incredibly sharp right out of the box. I work in a meat department and use this all day long and it rarely needs to sharpened with a steel.
