I ordered this $140 model from Amazon after finally giving up on finding one of the 8” variety in their classic collection.Upon initial inspection the instrument appeared undamaged and clean of any milling lubricants, coolants, debris, etc. Note, external packaging was damaged as if the package had been thrown or dropped onto a corner.Incoming inspection revealed a less than razor sharp cutting edge, which was disappointing given previous experience with the Wüsthof brand.I was also struck by the roughness of the milling marks witnessed on the factory edge.However, knowing the alloy mixture, forming and tempering processes have been well disciplined for over two Centuries of family ownership, I proceeded to the lathe with hope, where a 10” cotton wheel and some 8,000 Grit polishing compound waited to tune the cutting edge sharp enough to split one of the hairs from my wife’s head! I’m not talking about shaving hair off your arm, I mean literally being able to see the released side of the cut hair roll up as the follicle is pulled across the edge from the other side of the blade!I’d like to add that the cleaver tipped the scale at 597 Grams, which is 1.316 Lbs., slightly under the advertised weight of 1.5 Lbs. However, I think the operator might come to appreciate the lighter weight as the length of the 8” blade wields plenty of fulcrum to hack thru even large bone.Anyway, I’m courting the idea of having a leather scabbard fashioned for the instrument as an added safety precaution. I pity the one that drops this butcher’s tool toward their toes!Anyway, I’d give it 4 stars because the edge wasn’t ground to my expectations. I know it isn’t a straight Razor, but even my axe will shave hair.Happy Chopping

I love a sharp knife as it can make the task of meal prep easy and fun(?). I tried this knife for several different tasks and it failed every one. I am deeply disappointed and will return.

This is a very heavy cleaver. I have a lot of Wusthof knives. I love them. They never let me down. No complaints about this item.

This is a big knife for big jobs. If you lack the moxy to swing a massive piece of German steel, this is not the tool for you. If you do have what it takes, saddle up as this thing can chop through anything. I hope your cutting board has the same fortitude that you do, my friend...

I purchased this for a Christmas gift for the chef in our house. He LOVES it. He told me he has been admiring every time he looks at it. It's quite substantial! After chopping and dicing a massive butternut squash in a matter of a couple of minutes, my arm was sore. The cleaver accomplished the task with ease. The chef loves it for processing and butchering his beef, venison, pork and chicken. It's a great tool if you process your own meats.
